Villa Paulus is issued from a soil of “marnes kimméridgiennes” exhibits classic perfumes of lemon, grapefruit on top with varied nuances of ripened fruit underneath. The citrus aromas contribute to the freshness and the finesse in the mouth. Annual production: 20-28.000 bottles. Food suggestions: filet de sole beurre blanc, noix de Saint-Jacques et sa sauce au foie gras, turbotin et sa poêlée de girolles, volaille aux morilles.
