A selection of parcels of old vines with naturally small yields is chosen for the cuvée Nostre Pais. Manual harvest with sorting is undertaken. During vinification, gentle extraction with manual punching down of the cap occurs. The wine is aged in french oak barrels for 6 months, where 50% of the volume is in the presence of malolactic lees. One single bottling run is done without filtration.
The wine appears deep red with violet highlights. On the nose and with a bit of aeration, the wine becomes pure and complex, with aromas of black fruit, cherry and hot stones. In the mouth, its dense and velvety body fill the palette and reveal notes of cacao, dried herbs, and pencil lead. The fresh and fruity finish is heightened by mineral notes and fine tannins. Optimal service temperature: 16C-17C
