A chenin blanc white wine. Manual harvest in crates and fermentation and ageing occur “sur lies” in barrels for 13 months. Vinification occurs without additional yeast or other products, minimal sulfur added only at the bottling of the wine. A wine without splicing or filtration. Soil composed of clay on top of green micaceous sand and 80% of the flint (silex) and spongolithes on the surface and 20% within the profile gives combination of great power and finesse to the great wines of Jasnières. Age of vines: 70 years old. A full, dry wine with a lot of body combined with an extreme finesse, a wine that is absolutely masterful. Nose of great finesse underlying delicate flowers, full and level in the mouth with a fresh finish. This cuvée possesses perfect balance. As with the “Clos des Molières,” it is a gastronomical wine, principally for dishes with sauce, such as “poissons et coquillages cuits,” but also because of its power and finesse, it can accompany beautifully spicy and flavorful dishes, such as tajine or oriental cuisine.
