A chenin blanc white wine. Manual harvest in crates and fermentation and ageing occur “sur lies” in barrels for 13 months. Vinification occurs without additional yeast or other products, minimal sulfur added only at the bottling of the wine. A wine without splicing or filtration. Soil composed of clay and sand loaded with flint (silex) and spongolithes gives combination of great purity and finesse with added complexity. A dry wine with a lot of weight and fullness in the mouth. Powerful nose of mixed flowers and fruits, a suave taste with a lot of minerality on the finish. Ideal gastronomical wine, principally for dishes with sauce, for example “volaille ou veau à la crème,” “poisson au beurre blanc,” “coquilles saint-jacques,” and “coquillages cuits.”
