Romain Guiberteau produces magnificent wines from “grands terroirs” where he displays the full potential of the of the appellation Saumur. The Saumur Domaine is a wine of “demi-garde” (5 to 10 years) issued from Chenin Blanc. The age of the vines are between 3 and 50 years, and the soil is composed of clay-limestone. All the harvests are done manually with sorting before being put into boxes. The grapes are slowly pressed using a pneumatic press. For fermentation, a native yeast is used, and light filtration occurs in order to eliminate any unwanted yeast that could re-start the fermentation process. Wine is aged “sur lies fines” in inox vats for 6 months. Yield 45hl/ha. Avg. annual production: 11.000 bottles. No chaptalisation used. A wine of first-rate taste, it possesses a refreshing acidity and minerality that goes well with shellfish.
