One of the absolute references in Vouvray. For the passionate and meticulous winemaker, Philippe Foreau, the hallmark of a great wine encompasses aromatic purity, individuality, finesse, elegance, balance, long aftertaste. The taste should be frank and provoke emotion, amazement and be pleasantly digestible. The Vouvray moelleux is the most rare cuvée. It is only issued in the very best years where the grapes are selected very ripe. Two states of harvest are possible: either the grape is very golden and dry giving the classic Vouvray moelleux lots of subtlety, or the grape attains a noble rot offering the advantage of concentration. This “cuvée d'exception” is called at the domaine “Moelleux Réserve. The Moelleux 2003 is perfect combined with a a dessert with an apple base (e.g., tarte fine aux pommes, pommes au four) or foie gras.
