The Terres de Molines Cabernet Sauvignon cuvée comes from vines planted in a clay and limestone soil. Yield limitation through spring pruning and “green harvest.” A selective leaf removal occurs to improve grape ripeness and health as well as a late harvest to promote skin and aromatic ripeness. 100% destemming with sorting, and cold pre-fermentation maceration to maximize aromas and color. Temperature controlled fermentation (25C) with limited extraction. Maceration under hot skin cap (30C) for 4 days in order to round off the tannins. Ageing with micro-oxygenation to refine the tannins.
The wine appears deep garnet. The nose is subtle yet powerful, combining aromas of cassis, paprika, coffee and toast. The taste is big and tight, revealing the complexity of its taste progressively. Long, fresh, fruity finish.
