Grape(s): 100% Merlot.
The Terres de Molines Merlot cuvée comes from vines planted in a clay and limestone soil. Yield limitation through spring pruning and “green harvest.” A selective leaf removal occurs to improve grape ripeness and health as well as a late harvest to promote skin and aromatic ripeness. 100% destemming with sorting, and cold pre-fermentation maceration to maximize aromas and color. Temperature controlled fermentation (25C) with limited extraction. Maceration under hot skin cap (30C) for 4 days in order to round off the tannins. Ageing with micro-oxygenation to refine the tannins.
The wine appears a dark and brilliant red. The nose is very generous and complex with aromas of black cherry and underwood. The taste is tender and fruity and finishes with velvety tannins. Optimal service temperature: 18C Food Accompaniment: CHEESE: Fontina, Gouda, Camembert; MEATS: Beef, veal, small game; GARDEN: Black olives, sweet onions; Herbs: Mint, Rosemary, Juniper; Method: Pizza, Roast, Grilled; SAUCES: Carbonara, Béarnaise, Chili; DESSERTS: Berries, Dark Chocolate.
