The cuvée Joseph Torrès is issued from a terroir known as “Grès,” comprised of rolled pebbles and red clay. Only the best Roussanne parcels are selected (based on the soil and age of the vines). Strict yield selection occurs due to spring pruning and a green harvest. Selective leaf removal improves grape ripeness and health. The grapes are hand picked at peak ripeness to promote skin and aromatic ripeness. Additionally, cold storage of the grapes for 3 days at 2C, skin contact maceration for 24 hours, and partial racking of the must (débourbage sur voile) occur. Fermentation is carried out in new oak barrels, with ageing “sur lies” for 5 months with “batonnage.”
The wine appears beautifully golden with greenish glints. On the nose, the wine has a honey character with acacia flowers, rose petals, and ripe tropical fruits. The taste is full-bodied with scents of candied fruits and dried flowers. The lush finish is sustained by fresh wooded notes.
