Manual effeuillage. No fertilizer added to soil. Green harvest undertaken, contributes to relatively small yield of approx. 20hl/ha. Traitements raisonnés, grapes hand harvested, tri sur pied, chai en gravitation. After the harvest and vinification of 4 weeks, the cuvée "Un Jour sur Terre" is unique in that it is aged in hardened earthen jars for 18 months.

The porosity of the earthen jars permits a slow oxygenation process and continues, as it would inside of a barrel, except that it doesn't add any additional aromas to the wine. This wine thus conserves the little particularities of the grape, the malbec, and of its terroir!
