Grape(s): 80% Grenache, 15% Syrah-Mourvèdre, 5% Cinsault.
Traditional vinification, long period of fermentation. Partial de-stemming, no pressing of the grapes. Aged 15 months in the presence of a neutral reducter, then 15 months in an old oak vat, with no filtration between the time spent in the vat and the bottling of the wine. Yield 36hl/ha.
Possesses a glittering, garnet red color. Primary aromas of black fruits first dominate the nose. It then opens oozing notes of wild strawberries, tabacco, and pepper. The attack in the mouth is powerful with tannins that demand a bit of ageing. Lots of fat and roundness, very good structure. Persistent finish with retro-olfactory notes of prunes and cherries. This wine is addressed to the informed wine-lovers about the ancestral practices of ageing in “foudre de chêne. (Giant oak vat).” A product of prestige to leave, if possible, mature. Optimal service temperature: 19C. Perfect with “Gigot d'agneau grillé, gibiers à poils, civets de sanglier, daube provençale, plateau de fromages affinés...”
