Dominique Laurent invented, at the end of the 1980s, the concept of négociant “haute couture,” specailised in vinifying at the highest level small quantities of cuvées chosen for the exceptional quality of their vegetal material (old vines of the finest pinot noir grapes). His very unique way of conserving the wines for a long time “sur lies,” without racking, and with a minimal or no use of sulfites, makes his wines very difficult to judge before bottling with their subsequent aeration that they receive. But the wait is worth the effort, as the wines acquire a plenitude of texture and an aromatic complexity that sets it apart from other wines, as well as the very refined quality of the oak, with less recourse to new oak within the specially made barrels for the Dominique Laurent cooperage. For example, certain barrels such as the “chênes de Tronçais” give the wine unique qualities of dryness and burnt flavors. The range of wines from the house starts with the “qualité Tradition” aimed at catering and large distribution and plays the same role as a “second” wine from Bordeaux, and continues with villages no.1 and the “cuvées vieilles vignes,” issued from the best lots and the best barrels, bottled as in the past, “à la chèvre,” one by one, which can sometimes explain certain micro-variations between one bottle and another.
As always with this cuvée, the nose is miraculous with an aromatic nobility, with the most beautiful notes of not yet wilted rose imaginable within a wine of pinot noir and a very aristocratic texture. A wine of esthete.
