Grape(s): 100% Syrah.
A selection of old vines planted at very high density, exposed to the south/southeast and situated on hillside terrasses. Vines treated without insecticides or pesticides, the number of treatments are restrained dependent upon the weather conditions. Soil composition is shallow granite. Low yields, effeuillage, and green harvests all take place for a better maturity of the grapes. Manual harvest, and in the cave, rigorous sorting, pressing, and partial destemming occur. Fermentation of the skins “en cuves ouvertes for 2 weeks controlling the temperatures, regular pigeage and remontage. Malolactic fermentation in barrels with native yeast. Aged 18 months in barrels.
A complex and structured wine, aromas characteristic of a strong Syrah, red and black fruits, spices, violets, delicate woodiness. Gourmet and fresh on the mouth, tannins present but well integrated. A “vin de garde,” it is preferable to wait 4 or 5 years and can be aged 15+ years, depending on the year. Great accompanying "viande rouge en sauce, daube de joues de boeuf aux olives vertes."
