Grape(s): 100% Viognier.
Vines situated above the town of Chavanay. Alluvial and granite soil. Vines in the presence of weeds in order to prevent against soil erosion. No insecticides or pesticides are used, the number of treatments are restrained depending on the weather conditions, very little fertilizer is used and is exclusively organic, in order to respect the soil/plant balance. Low yields, effeuillage, and green harvests all take place for a better maturity of the grapes. Manual harvesting occurs, and in the cave, rigorous sorting and débourbage. Malolactic and alcoholic fermentation in inox tanks with control of the temperatures and using native yeast. Aged 6 months “sur lies” in tank and in barrels. Production of 43.000 bottles.
Nice varietal nose of yellow fruits, apricot, peach. In the mouth, well-balanced and gourmand, with a fruity and fresh final. Great as an “apéritif, assiette de tapas, tapenade, toasts de tomates séchées, caviar d'aubergine. Assortiment de sushi.”
