 The best of the oldest vines of the domaine are used for the cuvée « Les Chaillets. » Grown on steep slopes with a south/south-east exposure, situated on terrasses above the town of Chavanay, “Les Chaillets” is not the name of a specific place but comes from the local name of the terrasses. The soil composition is muscovite granite. Manual harvest. Pressing, malolactic and alcoholic fermentations carried out in barrels with native yeast. Ageing is carried out 9 months in barrels, “sur lies,” without racking and with regular batonnages.

An exuberant and complex wine, lovely yellow ripe fruits on the nose, in combination with gentle floral and spicy notes. A powerful and round wine on the palette, the minerality of the wine brings a long aftertaste. Accompanies “crustacés et coquillages, brochette de noix de Saint Jacques à la citronnelle.” Annual production: approximately 1.800 bottles
