Terroir: 90% Rolled Pebbles (galets roulés), 10% Chalky Clay (argilo-calcaire).

Yields: 20hl/ha

Viticulture: manual pre-pruning, manual pruning, trellising, manual disbudding, manual green harvest.

Harvest: By hand, by grape variety, and by vine with selective picking in the vines. 

Vinification: Destemming, fermentation using natural yeasts in inox vats, separated by grape variety and by vines, manual punching over, long maceration of 30-40 days.

Ageing: In burgundy barrels from one and more wines for 24 months. 

Maturity: Now-2028
