The Casta Diva comes from a parcel of Viognier and Clairette called “Les Coudoulières” situated on the hillsides of “Saint Laurent des Arbres (sandy, pebbly soil), and a parcel of Grenache and Picpoul called “La Plane,” situated on a plateau of rolled pebbles typical of Lirac. The avg. age of the vines for the Viognier and Clairette is 16 years old and for the Grenache and Picpoul, 30 year old. Yield is 31hl/ha. Vinified with débourbage, fermentation in new oak barrels, regular bâtonnage, and no malolactic fermentation. Aged in new oak barrels for 6 months. Annual production: 4.500 bottles.
The wine possesses a magnificent golden color with green glints, a very aromatic nose that combines smoky, citrus, white fruits, and mineral notes; a palate of a rare finesse: long, tender, and fruity. Food Accompaniment: Langoustes, poissons nobles, foie gras, viandes blanches, desserts aux fruits.
