Terroir consists of rolled pebbles typical of Lirac, with the average age of the vines being 30 years old. Vinification includes de-stemming, cold pre-fermentation maceration for 5 days, and then fermentation for 3 weeks between 26C and 30C. Regular délestage for the first 3 days, with subsequent remontage (pumping over) 2 times per day. Aged in inox tanks for 6 months as well as new oak, from 1 wine, and 2 wines for 12 months. Annual production: 6.700 bottles.
This wine is adorned with a sumptuous ruby red robe that is both intense and profound, enhanced by glints of dark purple. The sublte oaky, spicy, undertones combined with notes of cherry and cassis compose a powerful bouquet. Generous, ample, with silky tannins and a remarkbly long finish, the taste confirms that we are in the presence of a “grand vin,” the fruit of an extraction perfectly mastered. Food Accompaniment: Viandes rouges grillées ou en sauce, gibier. Optimal Service Temperature: 17C-18C.
