Soil: Grown on hilly terraces formed from limestone/clay. The soil changes with the slopes: limestone scree, dating from the end of the Jurassic era, alternating with rock hard Lower Miocene Blue Marl containing tertiary marine fossil deposits.
Vinification: Long macération of 28 days with frequent lees circulation.
Maturing: In casks for 14 months.
Tasting: It's a slightly smoky wine with aromas of black fruit and liquorice, possessing lots of freshness.
Food Pairing: Splendid with partridge cooked with chanterelle mushrooms, it is also delightful with spicy Asian dishes and even jamon de jabugo (pata negra).
