Destemming and pressing of grapes occurs in a neutral atmosphere. Afterwards, 48 hours of debourbage (racking must) at low temperatures. Entonnage is carried out with the clear juice. Malolactic fermentation in barrels. Ageing is done “sur lies” during 8 months. Vines are grown in a sandstone soil on slopes of red clay which allows the wine to obtain powerful aromas. The relief is made up of a series of limestone plateaus that reaches, on average, 200m of altitude. It is important to note the presence of the “mistral,” a sometimes violent wind that sweeps across the south of France which benefits the development of the vines. Because of the mistral, the Domaine Clavel has chosen not to attach the vines to any support mechanism.

Brilliant deep yellow color. On the nose, the wine possesses a beautiful complexity, combining exotic fruits, sweet spices, and woody nuances. In the mouth, an attack with a lot of freshness evolves into a powerful one with lightly honeyed fruity flavors. Well-balanced, with lots of “matière” and a beautiful length, this wine promises a beautiful future for the next 5 years. Accompaniment: “Crustacés chauds ou froids, foie gras, poissons en sauce, viandes blanche et toute la gamme de fromage.” Optimal service temperature: 8C-10C.
