We are in the presence of some of the most pure and most expressive Chablis of the entire appellation, with a signature of high maturity. For those who don't have access to Raveneau and Dauvissat—effectively unobtainable—they can be consoled with these grand expressions of chablis. If two and a half stars was existing in our classifications, Billaud-Simon would surely get them.” Billaud’s Chablis Montee de Tonerre combines high-toned herbal and citrus oil aromatics with a firm, impressively mineral palate that reflects a mixture of 40-year-old and truly ancient vines. Tactile pungency of white pepper, lemon zest, wintergreen, and chalk dust inform a concentrated matrix of yellow plum, white currant, and white peach, and this finishes with firm grip and minerality yet persistently juicy refreshment.
