Constantin-Chevalier a beautiful Provençal house in the Côtes du Luberon in the foothills of Provence. With nearly fifty acres of vines, the situation is ideal for making quality wines. The gravely soil resembles that of the great vineyards of the Rhône valley and the modern wine cellars are housed in thick walled buildings dating back to the sixteenth century; ideal cool conditions for making and maturing wines in this sunny part of France. Château ConstantinChevalier makes classic wines of the South; Provençal in charm, Rhône in style.
The finest cuvées of red and white wine are aged in new oak barrels and awarded the title ‘Cuvée des Fondateurs’ – literally ‘the wine of the founders’. Manual sorting, low temperature maceration, and fermentation is intentionally slowed down by maintaining low temperatures (16C-17C). The oak aged wines of Constantin Chevalier are made in very limited quantities and are vinified and matured to improve with age. The Cuvée des Fondateurs Blanc ferments in oak barrels and remains, “sur lies,” for three to four months. This gives it rich, aromatic overtones, and very good length.
The wine boasts a magnificent robe of pale-gold, bright and crystalline. The nose is a real aromatic explosion where mingling notes of white peach, lichi, watermelon and plum coincide. Its complexity and intensity is surprising. In the mouth, the attack, vivacious and frank, is followed by overtones of willow and sorrel with a beautifully long and flattering finale, ending with a slight hint of bitterness which contrasts nicely with the aromatic expression.
