Average age of vines: 35 years old.
Soil/Terroir: The vineyards of Chateau Champarel are the highest of the entire Pécharmant appelation and have a southern exposure on a gentle slope. The soil consists of mild calcareous clay on a foundation of well-drained limestone.
Vinification: The optimally ripe grapes are hand harvested undergo a long maceration and fermentation in stainless steel for several weeks. Then follows a maturation for 18 months in oak barrels (30% new wood) in an underground cellar. The wines are matured then 2 and half years in the bottle.
Taste: Deep and complex bouquet with exotic cassis berries, laurel, and the smell of pencil shavings, cinnamon, underbrush and truffle. The wine has good power, creaminess, balance and great elegance in a pure long finish with ripe supple tannins and lots of gossamer fruit. A wine that shows very good pedigree.
Food Pairing: Cote de Boeuf, Peking duck, spicy asian dishes with red meats. Also pairs well with hard sheep cheeses such as Brebis and Manchego.
Drinking temperature: 17/18 degrees C. No decanting necessary.
Maturity: Now-2018.
