Soil/Terroir: The vineyards of Chateau Champarel are the highest of the entire Pécharmant appelation and have a southern exposure on a gentle slope. The soil consists of mild calcareous clay on a foundation of well-drained limestone.
Vinification: The optimally ripe grapes are hand harvested and undergo a long maceration and alcoholic fermentation in stainless steel for several weeks. Then follows a maturation of 12-16 months in oak barrels in an underground cellar. The wines ripen further over a period of 2 and half years in the bottle.
Tasting Notes: Nice deep, complex earthy bouquet with blackberry, cassis berries, mint, bay leaves and the smell of underbrush and truffle. This elegant, classical bordeaux styled wine possesses great freshness with a pure and very long finish with ripe tannins and lots of good berry fruit.
Food Pairing: Cote de Boeuf, Peking duck, spicy asian dishes with red meats. Also pairs well with hard sheep cheeses such as Brebis and Manchego.
Drinking temperature: 17/18 degrees C. No decanting necessary.
Maturity: Now-2016.
